Lunch for the Week - Chicken Burrito Bowl

I love watching the Tasty video on Facebook, Instagram, etc... The 30sec videos show easy and simple recipes with all of the steps included. I came across one that I decided to try for myself.

Recipe:
Serves 4-6

INGREDIENTS

2-3 boneless skinless chicken breasts
3 bell peppers, any color, sliced
1 large red onion, sliced
2 tablespoons olive oil
1 tablespoon taco seasoning
Salt and pepper
1 jar salsa
3 cups cooked brown rice, divided
1 can black beans, drained and rinsed
1 can corn
1 cup shredded cheddar cheese
1 lime, sliced into wedges
Fresh cilantro to garnish
PREPARATION
1. Preheat oven to 400˚F/200˚C.
2. Line a baking sheet with foil.
3. Place the chicken, peppers, and onions onto the baking sheet and drizzle with oil.
4. Sprinkle the taco seasoning evenly over both sides of the chicken breasts.
5. Salt and pepper the peppers and onions, tossing to coat.
6. Top each chicken breast with a generous pour of salsa.
7. Bake in a preheated oven for 25 minutes.
8. Rest chicken for 10 minutes, before slicing into strips.
9. Add a base of brown rice to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge.
10. Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.
11. Meal-prep FTW! Enjoy!

Chocolate Raspberry Tart

Madi and I made a dessert for Mother's day.  You can get the recipe here or you can Google Martha Stewart Chocolate Raspberry Tart. This dessert was such a simple yet elegant dessert to make. The recipe tells you to make your own chocolate crust but I found that it was less effort and cheaper to just buy the crust. This took me 10 minutes to make and it chilled for about 45 minutes.

June 2013

Madi is now working at the town pool, as a lifeguard. As she was being rushed out of the door to go to work she had no time to pack her lunch. So Mom and I made her lunch and better yet delivered it right to her!!! 
Hamburger, Mashed Potatoes/Cauliflower, Pineapple, Watermelon, Homemade Cookies 


Mom made Chicken Pot Pies right before we had to go to Church. I had softball so I ate mine on the way!! :)

We even got our own individual ones!! Who's ready to eat?



Mom and I made a dinner for the 2 of us. It is shrimp, salad, and cheesy biscuits. And for the drink, Simply Lemonade. (My favorite) :) 


I'm getting hungry :)

Best Chocolate Chip Recipe

I finally found a recipe that I can count on!
This is amazing you have to try it.
It does not say the amount of chocolate chips so I just did 2 cups.
Also it says to but them in the oven for 8 minutes, instead I did mine for 9 because they were too gooey.
